So often we find ourselves debating over the healthy, unsatisfying options and the one, seemingly tasteless, yet healthful, alternative. Bistro Elaia strives to remove this dilemma by offering a wide range of foods lower in sugar, fat and salt, and higher in whole grains, fruits and vegetables.

You’ll feel good about your body and the planet. We cook with food that is locally sourced and organic.

About the Executive Chef, Paolo Neville

Paolo NevilleOn an organic farm outside Boulder, CO, future Chef Paolo Neville developed a deep respect for the simplicity of fresh produce and a connection to the land. Cooking his way through high school, he realized cooking came naturally to him and could be a fulfilling career.
In the early nineties, Paolo began working in a popular Mediterranean restaurant under Master Chef Raimondo Laudiso and served as sous chef for five years.

Armed with an extensive repertoire of dishes, Paolo moved to San Francisco in 1998. After a year at an upscale French brasserie, Paolo accepted a head chef position at a small bistro in the heart of the Sonoma wine country. While overseeing the Bistro, Paolo helped open an eclectic all-American steakhouse. He remained the head chef for the next three years, winning numerous awards throughout Northern California.

Seeking to expand his passion, Paolo accepted a chef position at a prestigious Winery in Santa Rosa California and spent the next three years executing flawless wine and food pairings under Executive Chef Todd Muir. Before returning to Colorado, Paolo and Chef Muir prepared a seven course meal at the infamous James Beard House in New York City.

Landing back in Boulder, Paolo spent several years as chef de cuisine at an upscale French Brasserie. In spring 2008, he became executive chef for Legacy Ridge and Heritage-Westmoor golf courses, where he continues a tradition of freshly prepared dishes made extensively with local Colorado ingredients as well as monthly wine dinners.

Bistro Elaia is Paolo’s latest and greatest accomplishment. Chef Paolo’s desire to prepare healthy, great tasting foods is evident in the dishes available through Bistro Elaia’s healthy counter as well as their extensive gourmet catering menu. As part owner and executive chef, he uses his talents to create a unique, fresh menu that fits perfectly with the concept of the Anschutz Health and Wellness Center.
